Easy Baked Mediterranean Cod

Approx. Times:  Prep 20 minutes   Cook Approx. 7-9 minutes

Servings: 6


6 (4-5 ounce) cod fillets
salt and pepper to taste
garlic powder, or to taste
1-2  cups spinach with stems removed, or to taste
1-2 cups grape tomatoes, quartered
1/3 cup chopped onion
1/4 cup olive oil
1/4 cup balsamic vinegar, or to taste
1/2-1cups shredded mozzarella cheese, or to taste



1) Preheat oven to 375°F or if grilling, Medium High Heat

2) Place cod on a baking sheet lined with parchment paper and season with salt, black pepper, and garlic powder. Top with spinach, tomato, and onion. Drizzle olive oil and balsamic vinegar over cod and top with mozzarella cheese.

3) Cook until fish flakes easily with a fork, 7 to 9 minutes.


If Grilling

Line heavy duty aluminum foil on the bottom of a cast iron skillet and grease to keep fish from sticking. Prepare as above and cover with foil. Cooking times will vary, especially with the grill, so keep an eye on it. You can wrap each piece of fish individually in foil to grill. If you do that, I recommend indirect heat.

Serve with a rice side, any type you like, a vegetable and some Italian bread.
